Garden Update

I enjoyed the first fruits of my labors yesterday with the harvesting of a zucchini and a small hot pepper. They came from plants given to me by our houseguest. He works in a place with a nursery and his boss was going to throw out a bunch of vegetables that either looked sick or had damaged pots. So I planted what he brought and hoped for the best. In truth the hot pepper was already on the plant when he gave it to me so I just gave it a little more time on the vine. I cooked it up in what I'm calling pseudotouille, my own take on ratatouille. I stir-fried some onion and garlic with bacon. Once there was enough rendered fat I threw in the pepper and zucchini. I then tossed in a few fresh mushrooms. Just before it was cooked I added some canned tomatoes along with some fresh basil, oregano, and thyme from the garden. I let it simmer for a few minutes and voila.

Some cherry tomatoes are starting to ripen and I "fear" that I will be eating a ton of them this summer. Another of the rescued plants was a pumpkin. I think it's showing its gratitude by taking over most of the garden. I somewhat planned ahead and planted it off in a corner where it could have space. Yeah. Not enough. Hopefully it will produce something.
