Chilis Roasting on an Open Fire

Every place has its own unique sight, sound, or smell that provide a focal point for memories. Living in New Mexico one of the smells of the season is when the first green chile crop comes in, and stores start to roast it. You will see large wire-mesh tumblers all over the place in parking lots of every food store and vegetable market. The air will be filled with the *whoosh!* sound of the propane burners and the air will be filled with the glorious aroma of roasting chile. This morning I was riding my bike to work and I passed by a restaurant that must have been roasting their own chiles. I almost swerved into traffic as I closed my eyes and breathed deeply. Ahhhhh. It is a smell that has ingrained itself into my memory since moving here 7 years ago. Now I have a taste for a smothered burrito.
