So far I have harvested 3 zucchini and a handful of serrano chiles. We have a couple of eggplant forming, and the tomato plants are developing lots of green tomatoes. I have a few green chiles ready to be picked, but I want to find a good relleno recipe first.
I have been preparing the zucchini in an improvised fashion. I saute' onion and garlic in olive oil. I have been adding the serrano chiles as well for a little kick. I then add sliced zucchini and cook to almost done. I then add a can of diced tomatoes with a teaspoon of Italian spices. Voila! The other day I made the "furry" version of this by frying 3 strips of bacon instead of using olive oil. Everything was then sauteed in bacon grease. After adding the tomato I topped everything off with a Parmesan/Romano cheese blend. *nom nom nom*
