After missing last year Kitty and I decided to once again buy a 25-lb bag of green chile, have it roasted, and then preserve it for a year's worth of recipes. Some people just throw the roasted chiles into ziploc bags until they need them. Then they will do the task of peeling and seeding them. We do all of the work up front so that whenever we need some for a recipe, we simply open a bag and they're ready to use. We spent somewhere around 5-6 hours doing all of the work, which is about par for the course based on previous LJ entries in years past. We ended up with about 60 4-5 oz bags. We will get to taste some of our hard work tomorrow when we host a furmeet with green chile bacon cheeseburgers on the menu. Yes! Can haz cheezburger!
