One of the most famous movie scenes from "Five Easy Pieces." Surprisingly, I have never made a chicken salad. Way back when, I used to buy pre-made chicken salad from Costco. Last year I bought Costco canned chicken to put on chef salads I used to take to work for lunch. Some of the cans were sitting in the pantry, so I decided to try my paw at making chicken salad. Of course there were dozens of recipes online. Like I usually do, I found the common denominators to most of the recipes and then struck out on my own. The base seemed to be 4 parts chicken to 1 part mayo. Most had celery. Some had green onion. Some had white. There were usually nuts, usually almonds. Then I tried different flavor profiles. For an Asian kick I added sesame oil and Siracha. Different spices have included dill, rosemary, garlic, and curry. I substituted apple for the celery in one batch. The most recent batch included grapes. The toasted almonds were my favorites, but I'm thinking about adding cashews, maybe with some curry. I would do walnuts, but Kitty told me she hated them. Oh yeah. She has been the benefactor to my experimentation. Once it's made it's fair game to whomever wants a sammich. So at least I gained one new culinary skill during this lockdown.
